High-protein, lower sugar chocolate mousse recipe

This is one of the easiest desserts to make.
It’s also the one my whole family enjoy without exception and the real bonus is it’s nutrient-dense and high in protein.
To make it all you need is 3 ingredients (or two if you want to be very abstemious and leave out the maple syrup!).
6 medium or 5 fresh eggs (If salmonella is still an issue where you live, use pasteurized)
180g melted dark chocolate (I use 85% cocoa)
Sweeten to taste with maple syrup.
How to make
Separate the egg yolks from the whites, putting the whites into a whisking bowl and the yolks into a separate bowl.
Whisk the egg whites until stiff.
Stir your egg yolks until mixed together and then slowly pour in the newly melted dark chocolate stirring all the time.
Now pour the chocolate mixture into the egg whites, again stirring as you go.
Add a tablespoon or two of maple syrup (sweetening to taste) and that’s it!
I usually share between 6 small bowls and refrigerate for a couple of hours before serving.
